Zucchini Fries

Zucchini cut into wedge fries, and coated with a Parmesan crust makes for a healthy batch of "fries" to go with any dinner. We had these as a side with the Baked Pretzel Chicken Tenders and they were a great pair!

Turning Zucchini into Fries

We love zucchini in our house hold so we made a lot of fries! I pretty much went with 1-2 zucchinis worth per person - we eat a lot. I washed and cut each zucchini in half crosswise, and then lengthwise until i reached my desired thickness of fry.


I then set up a little dunking station for the zucchini. In one bowl I cracked and scrambled an egg. In another I mixed the garlic powder and Parmesan cheese.


After everything was ready, I dunked each piece into the egg and then dipped in the cheese mix. Each piece then goes on the baking sheet that I prepped with a wire rack and some non-stick spray. You don't want to forget the spray! your zucchini fries will leave their crust on the pan and you will be left with a zucchini piece.

Baking the Fries

I tossed them in the oven for 20-25 minutes on the bottom rack. If you aren't very trusting that your oven cooks evenly, I would give the tray a spin half way though so you don't get extra crispy back fries and soggy front ones. This worked out perfect with the Baked Pretzel Chicken Tenders since they cook at the same temp for the same time! No need to time out your dinner!



Once they were all cooked, I pulled them from the oven, divided them between us and served!



There was not a fry left at the end of dinner. These were so good! They are a tad putsie since each individual fry needs your attention, but for a weekend treat that keeps you eating healthy is sooo worth it!
