Crank On the Crockpot
Crockpot meals are some of my favorites and they make cooking on busy days so much easier. For this one, I started by picking apart a rotisserie chicken. I love those things, and they make my life so much easier! If you want you can totally use chicken breasts and shred them before serving the chili, but these grocery store birds are my go to. I then tossed the chicken in the crock pot with the corn, beans, chilies and onion.
Spicing Things Up
I then added in the spices! The cumin, garlic, and chili powder really make this dish! You can add more or less of each to your liking! I prefer a little heat in my chili so If you like things more on the mild side i would cut back a bit. You can always add more at the end, you can't take it out!
Next, I added in the chicken broth and gave everything a really good stir before leaving it sit for the morning. It won't look like there is enough juice but don't add more chicken broth! The juices from the veggies will cook out and there will be plenty! You don't want to end up with super runny chili!
I then set the slowcooker to low, and left it sit for 4 hours. You can leave it for up to 6 hours and then after that I would say change it to the keep warm setting. When you are ready to eat, mix some cornstarch up in milk and stir it into the chili. This will help thicken the chili up, as well as add some creaminess to cut the spice!
Scoop up the chili into bowls and serve it up! 1 point meals to the rescue! I love this stuff and it being 1 point means I can splurge on another meal, maybe even a slice or two of pizza!
