Thin Greek Crust Pizza

Pizza crust made out greek yogurt dough and rolled out to a perfect crispy thin disk, then topped with all your favorite pizza fixings!

Making the Crust

To make the crust for these pizzas, I made the same dough I use for my Bagels. I use equal parts greek yogurt and self rising flour with a tiny tough of salt (1 cup of each). Then I take a baking spatula and mix it all together until a nice ball of dough forms.

Once the dough is all combined, I threw some flour on the counter and on my hand. I divided the dough into 3 parts. (My mom is gluten free so I made a separate small batch of 1/4cup for her - see below for gluten free instructions)


I then rolled each dough ball into a thin pizza crust. We prefer super thin crust in this house, so if you like thicker crust you will just have smaller personal pizzas with a tad longer baking time.


Note: The yellower pizza is the gluten free crust. It turned out just as good according to my mom. Once I had all 4 pizzas rolled out and ready to go it was time to make them into tasty little morsels.


Gluten Free Dough

To make the gluten free crust, omit the normal flour and use your preferred gluten free flour. For 1/4 cup of flour add a heaping 1/3 tsp of baking powder and a tiny pinch of salt. Once you have that all combined add it to the greek yogurt and mix well until the dough ball forms. Then continue on with the rest of the instructions for normal crust pizza.


Adding the Goods

I chose a pizza sauce that was low points and put a ZERO point amount of sauce on my pizza. Be sure to check your ingredients and adjust the points accordingly.

I used Fat Free Cheese on mine and 1/2 cup of that stuff is only 1 point - I love the stuff it tastes like regular cheese to me and I use it in a lot of my stuff now. I missed cheese a lot and the find of fat free mozzarella and cheddar has been amazing!!



Bake it Up!

I tossed the two pans (GREASED) with the pizzas on top into the oven and baked them for 15 minutes. I then switched the pans so the bottom pizzas wouldn't get over cooked and then baked for another 10 minutes. Watch the crust, and if it starts to burn lower your temp.


Take it out of the oven when the crust is crispy and all the cheese has melted. The crust will cut normally with a pizzas cutter and you will be able to pick it up and eat it like a normal piece of ZAH!


Indulge in this amazing pizza without using up an entire days points! It was totally approved by my entire family and will become the homemade pizza of choice! I was stuffed after my pizza I didn't even have any of the fruit I had cut up to have on the side.
