Sweet and Spicy Meatballs

Sweet from honey - spicy from sriracha, these meatballs have just the right amount of heat to balance out the sweet! I made these and ate them all week as my lunch, they keep well in the fridge for at least 4 days.

Forming the Meatballs

I started by placing the 99% Fat Free turkey in a bowl, and adding in the bread crumbs, egg, salt, pepper, and garlic powder. I used my hand to mash everything together until a consistent mix formed

I then formed balls with my hands and placed them on a baking sheet covered in foil and sprayed with non-stick spray. I made the balls about an inch in diameter. This will give you 8 balls per serving.

I placed the meatballs in the oven for 20 minutes until the meat was cooked through. While the meatballs were baking, I cooked up some veggies as a go with and made the sweet and spicy sauce

Making the Sauce

To start the sauce, I added the honey, soy sauce, sriracha, garlic, ginger, and rice vinegar. I then cooked it on low heat until the sauce began to thicken, about 10 minutes. I then removed from the heat and allowed the sauce to sit until the meatballs were done.

When the meatballs are cooked, I added them into the pan with the sweet and spicy sauce and mixed until the meatballs were all evenly coated. I then placed 8 balls into each container with the veggies I had prepped and enjoyed the meal all week long!

These would also go well as an appetizer at your next gathering!
