Strawberry Watermelon Caprese Salad

Chopped up strawberries and watermelon combined with mint, goat cheese, pine nuts, and balsamic glaze for an amazingly refreshing caprese salad perfect for summer!

Getting Prepped

To start things off, I cut up half of a large watermelon into small, bite sized, pieces and placed them in a large bowl.


Next I sliced up some fresh strawberries into quarters and added them in with the watermelon.


This next step isn't necessary if you don't want to spend time toasting the pine nuts, but it does enhance their flavor quite a bit and I would recommend spending the 2 minutes to get them nicely toasted. I placed the pine nuts on a small skillet over low heat, and tossed them with a spatula until they were golden brown. This takes 1-2 minutes - be careful not to burn them

Mixing Things Up

Once the pine nuts were toasted- if you are going that route- I added them into the bowl with the watermelon and strawberries and gave it a good mix. I chopped up the fresh mint into small pieces and added it to he bowl. I then added in the goat cheese and gave another good stir. I then placed the bowl, covered, in the fridge until it was time to serve.

When serving, I opted to allow each person to scoop out their salad and then individually squeeze the balsamic glaze over the top of their serving. This way each person can decide how much they want and the salad doesn't get weighed down in the fridge.


NOTE: I buy bottled balsamic glaze at the store- its super convention and always really tasty
