Heating the Potato
I like to cook my potatoes in the microwave because it's so much faster and when I'm hungry this making a quick and filling lunch. I washed my potatoes and the stabbed them each a few times on all sides to allow the sir to escape. I then put the two on a plate and cooked them for 10 minutes on high.
If you are doing 1 serving, cook the potato for 6 minutes and see if it is soft and add additional time if its still firm- cooking times will vary by microwave and size of potato

Cooking the Spinach and Mushrooms
In a large skillet I added 2 cups of chopped mushrooms and added in some balsamic vinegar and cooked until the mushrooms were heated through. I then added on some garlic powder, onion, powder, salt and pepper. I added in the spinach and cooked until it was wilted- about 3 minutes.

Finishing it Up
I cut each potato long ways and fluffed the potato with a fork. I then divided the spinach and mushrooms between the two potatoes and topped each on with 2 Tbsp of the grated Parmesan Cheese
