Chicken smothered in a spinach, artichoke, and Greek yogurt mix and covered with mozzarella cheese slices and baked for a healthier take on spinach artichoke dip

Seasoning the Chicken
I placed the chicken breasts into a greased casserole dish and then seasoned the tops of them with salt, pepper, onion powder, and garlic powder. I then set the dish aside to make the spinach and artichoke mixture

Mixing the Spinach Artichokes
I cooked the spinach in the microwave for just a few minutes until it was mostly thawed by not cooked. I then transferred the spinach to a paper towel and squeezed all the excess water out. I then mixed the spinach with the Greek yogurt and added in the chopped artichoke hearts. I mixed in the salt, pepper, and garlic powder and then added it to the casserole dish.

Baking it Up
I topped the dish with 6 slices of mozzarella cheese and then baked the casserole at 400 degrees for 50 minutes until the chicken was cooked through. I then served divided it into 4 portions, served it up, and enjoyed!
