Ground pork sausage cooked up and added to a spicy pumpkin soup base for a filling and delicious soup perfect for a cool fall day

Prepping the Soup Base
To get things started, I added the chopped onion and garlic to the bottom of my soup pot and cooked them until the onion was soft. I then stirred in the pumpkin, chicken stock, and spices except for the brown sugar and brought the soup to a boil

Cooking the Sausage
In a non-stick skillet, I cooked the sausage up until it was nice and crispy and then added it into the soup base

Making the Apples
In the same pan that the sausage cooked in, I added in the chopped apples and brown sugar and cooked the apples until they were soft, about 5 minutes. I then added them to the soup base.

Finishing Touches
I then added in the evaporated milk and some salt to taste. I also added in a can of water to thin the soup out a bit. Start with half a can and continue adding water until you are happy with the consistency of the soup. I brought the soup to a boil and then served it up!
