Skinny Grasshopper Ice Cream Cake

All the flavors of your favorite grasshopper dessert made skinny for a tasty dessert that doesn't undo your day!

Making the Crust

To start things off, I sprayed a 9x9 baking pan with nonstick spray. I then crumbled up 4 Enjoy Life Cocoa bars (Or your favorite brownie bar) and sprinkled the crumbles along the bottom of the pan.










Making the "Ice Cream"

In a medium bowl, I mixed the milk and the pudding mix together until the pudding set.


I then mixed in the peppermint extract. Once combined, I added in the chocolate chips and folded in the thawed cool whip until the pudding and cream are well mixed together









I poured the mix over the brownie crumbles and spread it out with a spatula. I topped the ice cream with some extra chocolate chips. I covered the cake and placed it in the freezer for 6 hours


When ready to serve, Remove from freezer for 10-15 minutes prior to serving and Enjoy!
