Shrimp tossed in a mayo vinegar sauce and mixed with celery, onion, and blue cheese stuffed olives then stuffed inside a hollowed out tomato!

Making the Sauce
To make the sauce for the shrimp salad, I mixed the mayo, white wine vinegar, salt and pepper in a small bowl and whisked it together with a fork until it was smooth

Making Shrimp Salad
I sliced up the cooked shrimp, onion, celery, and olives into bite size pieces and placed them in a bowl together
I then added the sauce to the shrimp salad mix and stirred until everything was evenly coated

Preparing the Tomato
I washed and cut off the top of each tomato and used a spoon to gently scoop out the inside of each tomato
Finishing Up
I then spooned the shrimp salad into each tomato. About half the salad should go into each tomato. There may be some extras in your tomatoes are on the smaller side. I topped each tomato with a leaf of fresh basil torn into small pieces

Serve up the Shrimp Salad Stuffed Tomatoes and enjoy for a tasty, healthy, low point meal!
