Memorial Day weekend was a hot one for us Wisconsin folk reaching the 90s four days in a row. What better way to celebrate the heat and remember our fallen service men and women then to have a scoop of ice cream over the easiest peach cobbler cake ever.

Get To Dumping
To start I took a large baking dish, 9x13, and sprayed it with nonstick spray. I then dumped the box of cake mix - without adding eggs/oil - into the pan and spread it out.
I then opened 2 cans of peaches packed in extra light syrup and dumped the liquid from the cans onto the box cake mix.
I use a spatula to mix things around a bit because no one like clumps of dried cake mix, but you don't have to go crazy. Just a little stir to get things somewhat incorporated.
Once that was ready, I opened the 3rd can of peaches, drained them, and rinsed them. I also rinsed the other two cans of peaches off as well. No need for the extra sugar there! After rinsing, I layered the peaches on top of the cake mix and juice and finally finishing off with a sprinkle of cinnamon on top.
Baking Time
Now that the cake has been assembled in all of 5 minutes, I tossed it in the oven for 45 minutes to start and then added an additional 10 to make sure the cake was golden and cooked through.
If you don't plan to eat it within a few hours, I would refrigerate the cake until ready. A quick 20 seconds per piece in the microwave brings this bad boy back to life. We served it up with a scoop of vanilla ice cream and it was absolutely fabulous. Especially for how easy it was to throw together!
If you are going gluten free, you can totally use boxed gluten free cake mix, just adjust the points depending on your brand.
