Preparing the Skewers

I cut my chicken into large chunks, about 2 inches.

I then added the balsamic vinegar, salt, and ginger to a zip bag and placed the cubed chicken inside. I let the chicken marinade in the fridge for 1 hour. You can do as little as 30 minutes or as long as 24 hours in the marinade.

When it was time to eat, I cut the peaches into large pieces, about 4 pieces per peach.

I then assembled the skewers starting with chicken, then a peach chunk, then a leaf of basil, until 4 of each piece was on the skewer.

Grill Them Up

I cooked the kabobs on the grill for 15 Minutes, making sure to turn the kabobs occasionally so the chicken cooks evenly.

The Finishing Touches

Right before serving, drizzle the balsamic glaze over each kabob, serve, and enjoy!

This was so delicious, and eating a piece of chicken, peach, and basil all in one bite was like a little taste of heaven! The low points of the kabobs left some room in my day for rosemary potatoes. The most delicious summer meal you will make!
