Shredded chicken and baby bella mushrooms cooked and mixed with quinoa loaded with Parmesan and garlic for a filling dinner!

Cooking the Quinoa
To get started I added the water and quinoa to my pot, covered it, and cooked it until it was light and fluffy.
Chicken and Mushrooms
In a large skillet, I added my chopped onions and mushrooms to the pan and cooked them up until they were soft. I then added in the chicken, thyme, garlic, salt and pepper and cooked that up for a few minutes
Blending it Together
I added in the milk, the cooked and fluffed quinoa, and the Parmesan cheese and gave it a good stir. I continued to cook the mix for a few minutes until the cheese was melted and everything was heated through
