This mini ice cream cookie sandwich is made with chips ahoy thins and fat free cool whip making them a tasty little cold treat to satisfy that sweet tooth.

Making these is so fast and simple and they are soooo yummy! I placed two of the chips ahoy thins and then scooped 1 Tbsp of frozen cool whip onto one of the cookies.
I put the second cookie on top and TA-DA! Mini Ice Cream Cookie Sandwiches
Make just one or make a bunch and store them in the freezer!
1 Package of Chips Ahoy Thins and one 8oz container of Cool Whip will make 14 Sandwiches! - if you stick to the tablespoon of cool whip you will have some cool whip left over
