Ground turkey seasoned with Mexican spices and taco seasonings, cooked with black beans, tomatoes, and green chilies then stuffed inside tricolor bell peppers and baked for a delicious Mexican Stuffed Pepper twist to traditional peppers. They are super filling and I ended up only eating half- the leftovers are fabulous!

Making the Filling
To make the filling for these stuffed peppers, I started by browning the ground turkey in a large skillet. To the turkey I added a taco packet, the chili powder, and the cumin. I chopped up some onion and added into the turkey along with a can of rinsed black beans, a can of green chilies, and a can of diced tomatoes.
Prepping the Peppers
I washed the peppers really well and cut the tops of each pepper. Using a spoon, I carefully removed all the seeds and membranes in each pepper
Stuffing the Peppers
I scooped the Mexican Turkey filling evenly into the peppers and stuffed them nice and full
I placed the peppers in a casserole dish and placed them in the oven at 375 for 30 minutes. After the 30 minutes were up, I added the shredded cheese to the top and placed them back in the oven for 10 more minutes
Once the cheese was nice and melty, I took them out of the oven
I topped the peppers with my favorite toppings for Mexican food- greek yogurt and cilantro! You can add any of your favorites too, just make sure to adjust the WW points!
Serve them up and Enjoy!
