Chicken breasts cooked in a orange soy sauce and served with stir fried snap peas, mandarin oranges, and cauliflower rice.

Getting Your Stir Fry On
To get started I cut my chicken into bite size pieces and added them to my greased skillet and cooked them until they were cooked through. I then added in the onion and snapped peas and cooked for a few more minutes.

Making the Sauce
In a small bowl I mixed the soy sauce, orange juice, wine, ginger, and corn starch and stirred until there were no more clumps. I then poured the sauce over the chicken and peas and cooked it until the sauce thickened. I then added in the 3 drained cups of mandarin oranges and 1/3 of the almond slices. I then stirred until everything was evenly coated with the sauce.

Finishing Touches
While the chicken and peas were cooking down in the sauce, I added my bags ofr frozen cauliflower rice to the microwave to heat up. I then served the mandarin orange chicken over the cauliflower rice and topped each serving with the reaming almond slices!
