Lemon Blueberry Tartlets

Lemon juice mixed with coolwhip and stuffed into mini phyllo shells. Top them off with a few fresh blueberries and you are done. This super easy, very quick dessert will make people think you slaved away in the kitchen, when really you spend 10 minutes!

Mixing the Cream

I started by adding the lemon juice to the Cool Whip and mixing those together until combined. Add more lemon juice to taste if you prefer more tartness to your desserts.

















Assembling The Tartlets

I found the mini tartlet shells in the freezer section by the cool whip in the store. I took those out of the freezer and spooned in about a tablespoon of the lemon Cool Whip.


I then topped each one with a few blueberries and that's it! Serve these cold and everyone will love them!












I had run out of blueberries while making these and switched over to raspberries near the end. Those were just as delicious and you can experiment with other berries for more fun flavors!
