Shrimp seasoned with jerk seasoning and then grilled for tons of flavor served with cauliflower rice cooked with pineapple

Marinating the Shrimp
I put my raw shrimp in a zip lock back and added in the oil and the jerk seasoning. I then sealed the bag and rubbed the shrimp until they were evenly coated in the seasonings. I then placed the bag in the fridge to marinade for 1 hour.

Skewering the Shrimpies
After the shrimp was done marinading, I took my metal skewers and placed the shrimp on them and set them on a plate.

Grilling them Up
I then heated up the grill and cooked the shrimp for about 3 minutes a side until the grey was gone and the shrimp were cooked through.
The Pineapple Cauli Rice
While the shrimp was cooking, I placed the 4 cups of frozen cauliflower rice in a large skillet and added the seasonings. I then dumped in the pineapple chunks, juice, and lime juice, and covered the skillet to let the cauliflower soften. Once the cauliflower was cooked, I stirred in a bunch of cilantro and divided the rice into four bowls.

Bringing it Together
I then took the shrimp and added it to the cauliflower rice and served it up! This would also be really good with a spoonful of coconut milk drizzled over the top!
