A winter favorite soup with potatoes and bacon! This version slims things down a bit and makes for a filling and tasty lunch or dinner!

Making the Base
To get things started, I washed, peeled and cut the potatoes into little 1 inch chunks. I sliced up and onion and added both the onion and potatoes to the crockpot. I added in the box of chicken broth and turned in on high for 4 hours.
I then cooked my turkey bacon in the microwave and crumbed it into large pieces and added them to the crockpot
Making it Creamy
With 30 minutes left of cooking time. I mixed the can of fat free evaporated milk with cornstarch and added that along with the cheeses to the base and gave it a good stir. I then covered the pot again and let it cook for another 30 minutes.
Topping Things Off
After the last 30 minutes are up, I used a masher and squished about half the potatoes, leaving the other half whole. I then mixed the soup well. I topped each bowl with extra cheese and chives!
