A healthy twist on the tradition gyro, by using chicken instead of lamb and turning it into a grilled burger for a perfect summer meal! All the flavors of a gyro in a tasty burger form! Serve it up with your favorite summer veggie for a really yummy low point meal.

Making the Delicious Gyro Sauce
You definable want to make the sauce first so that it has some time to sit and let the flavors really set it. Making it first as you start dinner is plenty of time. No need to make a batch earlier in the day. To start the sauce off, I cut the cucumber in 1/2 and set one half aside. You want to cut it so that the slices will still be round. Then take the other half and cut it the long way to be able to scoop out the seeds. I used a dinner spoon to scoop them out.
Once the cucumber was free of seeds, I grated the cucumber and then placed them in a paper towel and squeezed as much water from the cucumber out. In a small bowl, I mixed the greek yogurt, garlic, vinegar, lemon juice, salt and pepper and stirred until combined. I then added in the squeezed cucumber and gave it another good stir before placing in the fridge while I prepared the rest of dinner.
Chicken Gyro Patties
In a large bowl, I put the ground chicken, garlic, oregano, thyme, cumin, onion powder, and salt and pepper and mixed with my hands until the spices were well dispersed in the chicken.
I separated the chicken mix into 4 patties (quarter pound patties) and formed them with my hands.
Fire Up the Grill
If you don't have a grill or are making these in winter, you can use a skillet to cook the patties over medium high heat for 5-6 minutes a side. Since this is chicken, you want to make sure your burgers are cooked through.
For the grill, Fire it up, and cook the burgers about 6 minutes each side, or until cooked through. We have a handy dandy temperature gauge that tells us when our meat has reached safe temperatures. For the quarter pound sized burgers it took 6 minutes per side.
Preparing the Burger
While the patties are cooking, cut up slices of tomato and red onion as well as the remaining cucumber, to use as toppings on the gyro burger to give it that gyro taste and feel.
Place the English Muffins in the toaster and toast until that are at your desired crispyness. When the patties are nicely cooked, assemble the burger by placing a patty on the english muffin, topped with a tomato slice and red onion, and then topped with the gyro cucumber sauce and the other half of the english muffin.
