Grilled Tomato Tuna Melts

A super tasty tuna mix, stuffed inside a tomato and grilled to perfection, and topped with melted cheese. This is a perfect meal for a light summer cookout for lunch or dinner!

Mixing Up the Tuna

I have always loved tuna salad, especially the cold kind over noodles. This healthy take is served warm, but is just as delicious. I made the tuna mix a bit healthier then I used to make, by using light mayonnaise dressing instead of regular mayo. I mixed the mayo dressing with solid white tuna, chopped up some celery and red onion, and added in some red wine vinegar for extra taste.


Scooping the Tomatoes

I just used a normal dinner spoon to scoop out my tomatoes. I just cut the top of the tomato off, and gently - key word there - scoop out the inside. Be careful not to rip through the outside otherwise you will have a messy grill. Once I had all the tomatoes scooped and ready to go, I seasoned them to my liking with salt and pepper and set them on a veggie grilling tray.


Note: If you don't have a grill, or it is winter time and you are craving this, you can place the tomatoes on a baking sheet and use the broiler on high for 1-2 minutes in your oven to cook them rather than using a grill

I then scooped the tuna mixture evenly between the tomatoes, my dad fired up the grill, we tossed the tomatoes on, and cooked the tomatoes on there until the cheese was nice and melty, and the tuna was warmed through.

We then used some tongs to grab the tomatoes off the grill and served with some fruit for a super yummy cookout.
