Shrimp marinated with olive oil and herbs and then grilled for a fresh and light summer meal!

Making the Marinade
To start things off, I got out my measuring cup and added in 1/8 cup if olive oil. In the same measuring cup, I them mixed all the seasonings together- the lemon juic

Marinading the Shrimp
I then poured the marinade into a gallon sized zip bag and added in the raw shrimp to the bag. If your shrimp come unpeeled- peel and de-vine the shrimp prior to adding them to the marinade. Then i mixed my shrimp around in the bag until they were evenly coated. I pushed the air out from the bag and let the shrimp sit for at least 30 minutes before cooking.

Grilling the Goods
I then lit the grill and let it come to 350 degrees. Using skewers, I lined the marinated shrimp up and set them to the side for grilling
I then placed the shrimp skewers on the grill and cooked them for about 3 minutes a side- until the shrimp were pink and no grey remained
Once the shrimp were cooked through, I then carefully took the shrimp off the grill and served them up! We had these shrimp with my Pear Pecan Salad for a fresh and light summer meal!

I ate the leftovers cold as a quick and healthy lunch and they were just as fabulous cold as they were fresh off the grill! They would go perfect as a protein on a salad or with veggies!
