Chicken breast cooked under a bed of caramelized onions and topped with mozzarella cheese for a delicious French Onion Chicken!

Caramelizing The Onions
To get things started I melted the yogurt butter in a large skillet over medium heat. I chopped up the onions into strings and added them to the melted butter
I cooked the onion over medium high heat stirring occasionally until they were a golden Carmel color. This can take awhile- 20-30 mins to get the nice golden color that brings all the flavor. Once the onions are Caramelized I added the garlic and beef broth to the onions and cooked it until little liquid was left and added them to the seasoned chicken in the dish.
Prepping the Chicken
While the onions were caramelizing I seasoned the chicken breast with garlic powder, crushed pepper flakes, oregano and salt and pepper. I sprayed the casserole dish with nonstick spray and placed the seasoned chicken in the bottom
Bringing it Together
I then covered the chicken in the caramelized onions and topped the dish with the mozzarella cheese
I then baked the dish uncovered in the oven at 400F for 30 minutes or until the chicken is cooked through.
Divide chicken and onions between 4 plates and Enjoy!!
