Creamy Chicken and Rice

Chicken breasts slow cooked with rice and creamy soup and topped with Parmesan cheese for a delicious and filling meal that can feed a group or is great for meal prep!

Making the Creamy Sauce

To start, I mixed the two cans of low fat cream of chicken soup with the garlic soup mix. I then stirred in the milk and rice and mix until everything was evenly combined.











Cooking Things Up

I sprayed the bottom of my slow cooker with non-stick spray and placed the chicken breast on the bottom. I then poured the soup and rice mix over the top of the chicken. I then sprinkled the Parmesan cheese on top, covered the slow cooker, and cooked on low for 6-8 hours or high for 3-4 hours.


Finishing Touches

Once the chicken was cooked through and tender, I used two forks to shred the chicken and then mixed it into the rice. If the rice is too thick for your liking, add additional milk or some chicken stock slowly to loosen things up! Serve Hot and enjoy!


When using for meal prep, Cook the chicken and rice in the microwave for 3 minutes and enjoy!
