Chicken breasts cooked in coconut milk and seasoned with cilantro and lime juice and served over cauliflower rice

Cooking the Chicken
In a large greased skillet, I placed my chicken breasts on the heated pan and seasoned the side facing up with salt and pepper.
I cooked the chicken for about 4 minutes a side until they reach an internal temp of 165 degrees, and then i set them on a plate to the side.
Mixing the Coconut and Lime
In the skillet the chicken was cooked in, I added in the coconut milk, lime juice, and chicken stock and mixed them together. I then added in some garlic, salt, and pepper and stirred the milk again.
Next I placed the chicken back in the pan and cooked until the coconut sauce was thickened. I then topped each piece of chicken with a slice of lime and some cilantro. I then placed each chicken breast over some cooked cauliflower rise and drizzled some coconut milk over top for serving!
