Super healthy and really easy to throw together, this casserole was really good and full of healthy veggies and chicken!

Cooking Up The Veggies
To get things going, I took a small head of broccoli and a small head of cauliflower and cut them into bite size pieces. I put them in a large pot with some water and boiled them for about 15 minutes until they were slightly crunchy.
While those were cooking I greased a skillet up and cooked the onion and garlic for a few minutes. Next I added in the spinach and cooked until wilted. I then say those off to the side and started on the chicken.
Prepping the Chicken Mix
I find it easier to buy a rotisserie chicken and pick it apart then to cook a pound of chicken breasts and shred them. If you want to go the chicken breast route I would cook them in the crockpot during the day or have them pre cooked and shredded. In a medium bowl I mixed the Greek yogurt and eggs together and dumped in the chunks/ shredded chicken. I then added in 1 package of fat free cheddar cheese along with the spices and stirred until everything was combined.
Bringing It Together
I then sprayed a 9x13 baking dish with non stick spray and set it aside. I added the veggies to the chicken mixture and stirred until things were well coated. I then dumped the entire mix into the baking dish and spread it out evenly.
To finish it off I dumped grated Parmesan cheese over the entire dish evenly and those sit in the oven for 40 minutes. When the top is getting golden and crispy it's all done and you are ready to serve
