Ground chicken cooked and covered in tomato sauce, stuffed into zucchini boats, and baked with cheese on top for a different and healthier twist on chicken Parmesan

Making the Chicken
In a large skillet, I cooked the ground chicken until no pink was left and the chicken was cooked through. I then stirred in the tomato sauce and spices and brought the sauce to a boil. I reduced the heat to a simmer and added in half of the cheese and stirred until it was melted

Making Zucchini Boats
To make the zucchini into boats, I cut off the ends and cut them i half the long way. I then took a spoon and scrapped out the seeds and some of the flesh and then placed then in a baking dish. I spooned the chicken and sauce into the hollowed out zucchini

Getting Cheesy
I topped the chicken and zucchini with the remaining cheeses and then covered the pan with foil for baking. I baked them for 30 minutes and then removed the foil, and continued baking for 5 more minutes and then enjoyed!
