Chicken Enchilada Casserole

Chicken cooked with enchilada sauce in a slow cooker and mixed with tortilla strips, cheese, and olives for a wonderful casserole packed with flavor but low on calories!

Cooking the Chicken

I added the chicken breast to a greased slow cooker and than poured the enchilada sauce over top. I set the slow cookers to high and cooked the chicken for 4 hours (8 on low) I shredded the chicken with two forks and moved onto the finishing touches!


Finishing Touches

I then used a pizza cutter to cut my low point tortillas into strips. I added those strips to the mix and stirred everything together. I then topped the casserole with the cheese and olives and cooked the casserole on low for 1 more hour



Serve hot and enjoy! Top your enchilada casserole with plain Greek yogurt and green onion for some extra flavor- just adjust the WW Points if you are a Green Member


If you are meal prepping, cook in the microwave for 3 minutes (5 if frozen) and enjoy!
