A twist on the TikTok pasta trend using goat cheese instead of Feta, adding some mushrooms and onions, and serving it over zucchini instead of pasta!

Making the Sauce
I made the sauce similar to the TikTok trend. I used less oil- by a lot- and added in some mushroom and onion to spruce it up a bit. I added my 4 cups of tomatoes into the pan with an 1/8th cup of oil and added in my chopped onion and mushrooms. I seasoned the veggies with some minced garlic and dried basil. Then, I placed my 2 goat cheeses on top and popped it in the oven.

Mashing it Up
After the dish baked for 35 minutes, I grabbed a fork and large spoon and got squashing. I smooshed the tomatoes to get their juices out and then mixed the cheese into the tomato juice just like on TikTok.

Serving It Up
I cooked my zucchini in a skillet over medium heat and drained the water they released while the sauce was baking. I then topped the zucchini with the sauce and enjoyed!
