Blueberry Muffins

Full size blueberry muffins made with bananas, eggs, protein muffin mix, and blueberries all for a delicious guilt free muffin!

Making the Batter

I started with a mixing bowl and 2 peeled bananas. Using a fork, I mashed the banana until no large chunks remained


I then cracked two eggs into the mashed banana and mixed them in until a batter formed and everything was even. I added in 1/2 cup of high protein blueberry muffin mix and stirred with a spatula until the batter was combined. I then stirred in 1/2 cup of frozen wild blueberries and spooned the batter into muffin tins sprayed with non-stick spray


I then baked the muffin at 350 for 24 minutes or until a toothpick comes out clean



Let the muffins cool in the pan, and then store in the fridge in an airtight container. Enjoy these muffins as a guilt free snack or eat a few as a filling tasty breakfast!
