Preparing for Your Morning!
I use regular mason jars for my oats, and I found these handy dandy white screw on covers that make my life so much easier then messing with the metal canning ones! The pictures are a little backwards, as I've found I like to mix the wet ingredients first - its so much easier to get all stirred together - and I took these pictures before I figured that part out.
I dumped in the original unsweetened almond milk to the 1/2 cup line on the jar and then mix in the vanilla and lemon juice. I pour in a tablespoon of sugar free maple syrup and give it another stir. I then add in the chia seeds and mix those in. Next, I plop a spoonful of the greek yogurt in - about 1/8th cup but I don't measure this.
Once all of that is mixed together, I dump in the oats - I used old fashion style, but you can use steel cut if you prefer those. (Just don't use Instant Oats)
After that I dump in my desired amount of blueberries, about 1/3 cup. Sometimes more sometimes less - whatever you want to do. The good part about overnight oats is that they are very customizable! Once everything is mixed in, I then put the lid on and give them a shake so that everything really mixes in.
I set them in the fridge from there and leave them overnight to set up. Before I take them in the morning, I like to throw a blob of fat free cool whip on top for a little extra creamy/sweetness
If you like your oats more runny, stir in a bit more almond milk to get the consistency you like. If you prefer thicker oats, I would use slightly less milk then the recipe calls for.
