Blueberry mini donuts covered in a lemon glaze for a fun little bite sized treat!

Making the Batter
In a medium mixing bowl, I mixed together my flour, salt, and swerve. Once that was combined, i added in the egg, and almond milk and I gave ti a nice stir. I then melted 2 tbsp of yogurt butter and added it into the batter and mixed until everything was combined. I then added in the blueberries and gave a little mix until they were evenly incorporated.
Baking the Donuts
I spooned that batter into a greased mini donut pan. and I baked them at 350 degrees for 10 minutes.
Letting Them Cool
I then placed the donuts on a cooling rack to allow them to cool completely before frosting them with the lemon glaze- otherwise the glaze will just run off the donut
Lemon Glazing
I placed some swerve powdered sugar in a bowl and squeezed in the lemon juice until a frosting consistency formed. If it is still too thick- add a little bit of water to thin it out. I then dipped each donut into the glaze and then set it on some wax paper for easy clean up.
