A healthy way to get you nacho fix using bell pepper wedges as your chips! Top you pepper with taco seasoned chicken, tomatoes, cheese, and some Greek yogurt and indulge without the guilt!

Cutting the Peppers
I washed my peppers and then cut out the stems. I then cut the peppers into little wedges- like a tortilla chips and spread them on a baking sheet.
Preparing the Toppings
I had some left over shredded chicken in the fridge and added a tablespoon of taco seasoning to it and mixed it up. I then got out my favorite zero point salsa and some tomatoes. I didn't have any jalapenos or shredded lettuce in the fridge but any nacho toppings you like get them out!
Making the Nachos
I then spread the chicken out over the bell pepper nachos and added the other toppings that needed to heat up. I then placed the nachos in the oven and baked them for 15 minutes until everything was heated through.
Getting Cheesy
I then added the cheese to the top of the nachos and put it back in the oven for 5 minutes to allow the cheese to melt.
Once out of the oven, I topped the nachos with my cold toppings and gobbled them up!
