Mashed Avocado mixed with pesto makes for an extra flavorful and creamy sauce to smother zucchini noodles and chicken in! This fun twist on a pasta dish is all around delicious and worth the extra few points for a avocado! You can easily sub the chicken for shrimp as I was very torn on what I was wanting as my protein but decided on chicken!

Making the Sauce
To start I took an avocado and mashed it with a fork until relatively smooth.
I then added in the Pesto and mixed that in until it was well combined
Prepping the Chicken and Zoodles
I took 2 medium chicken breasts and cut them up into bite sized pieces for cooking. In a greased skillet I cooked the chicken over medium heat with some salt and pepper until the chicken was cooked through.
I then took a large Zucchini and used a spiralizer to make zoodles.
I added the zoodles to the cooking chicken and cooked for 2 minutes just until slightly soft. Next I added the sauce to the chicken and zoodles and cooked for 2 more minutes to get everything evenly coated.
Serving Things Up
To finish everything off, I divided the Zoodle Pasta evenly into two bowls and topped each bowl off with a flower of basil.
