A tasty, crispy, sweet tortilla treat made in the air fryer, and stuffed with an apple pie filling and topped with cinnamon sugar and caramel sauce!

Making the Pie Filling
In a small sauce pan, I added water, diced apple, and 1/4 cup of swerve. I cooked that until the apples were soft- about 6 minutes. Then I added in the cornstarch mixed with water and cooked a few more minutes until the sauce had thickened.
Stuffing the Chimichanga
I put a drizzle of carmel syrup on the bottom of the shell and then put half of the apple mix in each tortilla. I then folded both sides of the tortilla up and rolled the shell closed. I sealed it with some tooth picks to keep it closed. I then sprayed them with oil spray and air fried them at 400 degrees for 3 minutes.
Finishing Touches
When they came out of the fryer, I rolled them in a cinnamon sugar mix and then drizzled some more carmel over the top!
