A big dose of veggies makes this soup healthy and filling! Roasted carrots blended with sauteed apples and topped with chopped pralines for a hearty soup!

Roasting the Carrots
I peeled and chopped up my carrots and then placed them on a greased baking sheet. I sprayed them with non-stick spray and seasoned the carrots with salt and peppers. I then baked them for 30 minutes and flipped the carrots over half way through.

The Apples
In my soup pot, I sprayed the bottom and added in my onion slices and apples. I then cooked those over medium heat until the onions were soft and the apples began to brown.

Bringing the Soup Together
I then added 2/3rds of my roasted carrots to the soup pot and poured the 4 cups of veggie stock over the top. I added in the thyme, salt, and pepper and brought the soup to a boil. I then reduced the heat to low, and blended the soup with an immersion blender. I mixed in the remaining carrots and topped each serving with some chopped pralines. Serve it Hot and Enjoy!
